Yacon Syrup. It can be seen all over the internet-and even Dr. Oz has featured it on his show. (see his video from YouTube below)  It is derived of the Yacon Root-a a tuberous root that resembles a sweet potato or a yam. While composed mostly of water and carbohydrates like other root vegetables, the Yacon root contains Inulin, which has been shown in several scientific studies to have positive health benefits.

While Inulin is found in other plant species, Yacon root has been found to contain the greatest amount thus far.
