I always really like Jonathan Vine books. They don’t just offer a few recipes with no explanation. I have read quite a few of his books about Eating Vegetarian, Vegetarian Recipes, and a couple of others and have really enjoyed them. I equally like his book about Clean eating. Clean Food Diet doesn’t just offer 50 great recipes that are easy and can be added to the menu rather seamlessly, but he also talks about how eating clean is important, what to eat, how to cook it, and how to avoid additives or products with ingredients you can’t identify.
I found this book very helpful. We are still young in our journey to eating clean and this book was very clear on the why, what, and how of eating clean. The recipes in this book are very good-even the kids enjoyed them. I liked that they were divided by entree type, such as appetizer, main dish, dessert, snacks etc. This is a great book for clean eating newbies-it basically does the planning and thinking for you. Cut out salty foods and sweets, eat more fruits and veggies, drink nothing but water-and make sure to get enough water…This book is a great tool and I find myself going back to it often to brush up or to find a yummy dinner recipe or snack for the kids and me.

I’m sure you’ve seen them popping up recently. Spiral cutters are showing up in commercials, on grocery store shelves, and all over YouTube. These slicers are good for making things such as hash browns, squash or zucchini spaghetti, salad toppings, and so much more. All you need is a thick veggie, and it can make any veggie from carrots to potatoes into spirals medium and large and if you twist it right, you can also make shorter strings and creating the perfect hash browns or salad toppings.

Roasted Vegetable Pasta: (Food Network)
Ingredients
Kosher salt
2 small zucchini, halved lengthwise and sliced 1/2 inch thick
1 bunch asparagus, trimmed and cut into 2-inch pieces
3 tablespoons extra-virgin olive oil
Freshly ground pepper
1 small onion, diced
2 cloves garlic, thinly sliced
1 28 -ounce can diced tomatoes
1/2 cup grated pecorino romano or parmesan cheese, plus more for topping
9 ounces fresh linguine
1/2 cup chopped fresh basil
Directions:
Preheat the oven to 425 degrees F. Bring a large pot of salted water to a boil.
Meanwhile, toss the zucchini and asparagus with 1 1/2 tablespoons olive oil on a rimmed baking sheet; season with salt and pepper. Roast until tender, about 20 minutes.
Heat the remaining 1 1/2 tablespoons olive oil in a large skillet over medium heat. Add the onion; cook, stirring occasionally, until softened, about 8 minutes. Add the garlic and cook 30 more seconds. Increase the heat to medium high, add the tomatoes and simmer, stirring occasionally, 15 minutes. Remove from the heat and stir in the cheese.
Meanwhile, add the linguine to the boiling water and cook as the label directs. Reserve 1/2 cup cooking water, then drain the pasta and add to the skillet with the sauce. Add the roasted vegetables and the reserved cooking water; toss to combine, then stir in the basil. Divide among bowls and top with more cheese.

2 cucumbers made into spaghetti with SuperSwizz Spiral Slicer
1 tablespoon rice-wine vinegar, or distilled white vinegar
1/4 teaspoon sugar
Cayenne pepper, to taste
Salt & freshly ground pepper, to taste
Preparation
Whisk together vinegar, sugar and a pinch of cayenne pepper. Season with salt and pepper. Add cucumbers and toss to coat. Chill until ready to serve.
